I'm assuming they're going for that because it would be the perfect time to train their staff the students return.

Grand opening timing is massively key in this town. Nothing spells doom like a restaurant opening just after school (universities and local) lets out the and town empties for the summer. You can always tell 'out of town used to Florida's tourism calendar' franchise because they open trying to catch all the summer tourists.....that never appear in Tally.

Opening in winter break is actually pretty smart for reason above and gives returning students a new place to hit after being away for just a few weeks. And it gives us locals a chance to try it out before it is over run by the students.
